Slow Roasted Spicy Pork

About this recipe:
Pork is spiced with a dry rub of chilli, cumin, garlic and coriander, then cooked slowly in the oven.
2 tablespoons chilli powder
1 teaspoon salt
2 1/2 teaspoons ground cumin
2 cloves garlic, minced
small handful chopped fresh coriander
1 dash freshly ground black pepper
1 whole pork fillet, cubed
- Mix together: chilli powder, salt, cumin, garlic, coriander and pepper. Coat pork cubes with mixture and let sit for 45 minutes in refrigerator.
- Preheat oven to 110 degrees C/Gas Mark 1/4.
- Cook for 2 hours, or until edges of pork are crispy.
The pork had a delicious taste but it was very dry. I would welcome suggestions to make it less dry? I made a spicy tomato sauce as an accompaniment which went well with the pork
