Easy Dutch apple cake

About this recipe: Make this apple cake in autumn when local apples are at their best. A light sponge cake is topped with apples, sugar and cinnamon before being baked to perfection.


Serves: 15 

  • 100g butter
  • 200g caster sugar
  • 1 egg
  • 1 1/2 teaspoons vanilla extract
  • 190g plain flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 175ml milk
  • 2 apples - peeled, cored and each cut into eight wedges
  • 4 tablespoons caster sugar
  • 1 teaspoon ground cinnamon

  1. Sieve flour with baking powder and salt. Set aside.
  2. Cream together butter and 200g sugar until light. Beat in egg and vanilla until fluffy. Add flour mix alternately with milk, beginning and ending with the flour mix.
  3. Spread the cake mixture into a greased 18x28cm or similar sized baking tin. Gently press apple wedges into cake in rows. Sprinkle with 4 tablespoons sugar and cinnamon.
  4. Bake at 180 C / Gas 4 for 50 to 60 minutes or until apples are tender and cake tests done.

Looked simple and it is, but with great results worried about the tablespoon of baking powder but it is needed. I also popped in a bit of cinnamon to the cake mixture. This is a simple very delicious cake!! Will be baking this again!! - 03 Apr 2015
