Caramelised nuttiness

    Caramelised nuts . . . moreish and addictive. Made these since I was a nipper, one of granny's best recipe passed on. A treat for us big kids or as a food gift to friends and family. Be warned . . . YOU WILL NOT STOP at producing one batch. I divide mixture into smaller portions if giving as a gift.

    Makes: 10 Not enough!! ;-)

    • 200g nuts, mixed or your favourite
    • 150g icing sugar
    • 4 tablespoons any liqueur

    1. Mix together all of the ingredients. Cover nuts completely.
    2. Place over a moderate heat and stir constantly, making sure all nuts are covered. Ohhh does it not smell good??
    3. Continue stirring until icing sugar caramelises to brown. Be carefull not to burn. I do take off the heat if I feel it getting too hot. Keep stirring . . . it's worth it!
    4. Spread caramel mixture onto a silicone baking mat or greaseproof paper. BE CAREFUL- Hot caramel leaves a nasty burn to the skin or tongue.
    5. Wait for it! Let it cool for about 1 hour or longer, then tuck in. Tear into chunks and hide it from the children. Enjoy.

    Other ideas

    I add other ingredients such as raisins or other dried fruits. Omit the alcohol if you wish or if you serve to the children.
