About this recipe: Quick and easy cupcake recipe. You can ice and decorate these as you like, or enjoy them just as they are.

Ingredients

Serves: 12 

  • 100g Stork® margarine or butter
  • 100g caster sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 100g self-raising flour

Method

Prep:20min  ›  Cook:15min  ›  Ready in:35min 

  1. Preheat the oven to 200 C / Gas 6.
  2. Mix butter and sugar together until fluffy and add eggs and vanilla essence.
  3. Fold in flour and mix well. Place in 12 cupcake cases.
  4. Bake for 15 minutes. Allow to cool, decorate as desired and serve.

Tip

To make easy butter icing, mix icing sugar and butter until desired amount and flavour are achieved. Add food colouring if desired.

Just a little addition. I've found when making these increasing the ingredients to match the eggs weight is useful so if two eggs weigh 120g use that much sugar, butter and flour which with a teaspoon of baking powder plus a good whisk of the mixture before adding flour makes them rise much better. - 01 Oct 2012
