Spicy sausage goulash

    Essentially a goulash but spicy and not with beef. I prefer to use sausages because of the shorter cooking time.

    Makes: 2 for hungry people

    • 1 onion, chopped
    • 2 cloves garlic, chopped
    • 100g button mushrooms, sliced
    • 2 red chillies, diced
    • 8 good quality sausages
    • 2 tablespoons paprika
    • 1 (400g) tin chopped tomatoes
    • 2 tablespoons passata, or to taste
    • 300ml beef stock
    • 2 tablespoons tomato puree
    • chilli powder (optional)

    1. Fry onion until soft but not brown. Add garlic, mushrooms and chilli pepper and fry until the mushrooms brown slightly.
    2. Grill sausages, then slice into bite size chunks. Add to saucepan.
    3. Add paprika, chopped tomatoes, passata, beef stock and tomato puree. Bring to the boil.
    4. Add a bit of hot chilli powder if you want it hot. Reduce heat and let simmer on a low heat for 30 minutes. Add passata as needed to balance the taste.

    Serving suggestion

    Serve with rice.
