    About this recipe: Perfect for starter or main - pastry rounds are topped with goats cheese, garlic, fresh tomatoes and crunchy pecans.

    Ingredients
    Serves: 2 

    • 1 packet ready rolled puff pastry
    • 4 tomatoes
    • olive oil
    • 4 tablespoons chopped pecans
    • 2 garlic cloves, crushed
    • 1 packet goats cheese
    • salt and pepper to taste

    Method

    1. Preheat the oven to 200 C / Gas 6.
    2. Roll the pastry and cut in 10cm circles, 1 for each person. place on a baking tray; set aside.
    3. Baste tomatoes in olive oil, place on a baking tray and put in oven for 15 minutes. While they are in the oven, roast chopped pecans with garlic for roughly 5 minutes.
    4. Take tomatoes out of oven and skin them, chop roughly and place in centre of pastry rounds. Slice goats cheese and place over tomatoes, then sprinkle pecans and garlic over. Season with salt and pepper.
    5. Bake in the centre of the oven for about 15 minutes.
