    About this recipe: Gorgeously fruity traditional Irish loaf with a little twist. You can easily substitute spelt or gluten free flour for wheat flour. I've tried it with both and it's delicious. It's also a good recipe to have as a treat if you're watching your weight.

    Ingredients
    Makes: 1 loaf

    • 375g dried fruit (raisins, dates, prunes, currants, etc)
    • 250ml cold Earl Grey tea (1 teabag)
    • 200g gluten free flour or plain flour
    • 50g ground almonds
    • 2 teaspoons baking powder
    • 1 large egg
    • 75g dark brown soft sugar

    Method
    Prep:15min  ›  Cook:1hr  ›  Extra time:1day soaking  ›  Ready in:1day1hr15min 

    1. Soak the dried fruit in the tea overnight, or for at least 2 hours.
    2. Preheat the oven to 170 C / Gas 3.
    3. Mix the flour, ground almonds and baking powder until combined.
    4. To the dried fruit add the beaten egg and sugar then add the flour mixture one spoonful at a time while stirring to ensure the mixture is smooth. Spoon the mixture into a lined 900g loaf tin.
    5. Bake in the oven for an hour and skewer to make sure it's cooked through.
    6. Once cooled a bit, enjoy with a nice cup of tea!

    I love this! I haven't made this since I was a child, when I used to cook with my Mum. I couldn't believe it was as nice as I remember it. It's great for breakfast or as a snack. It's healthy (no fat, low sugar). There are other recipes for Brack on this site, but they all have too much sugar in them - with this amount of fruit, it's just not needed.     Altered ingredient amounts. I used just any old tea bag I had in the cupboard and it was great - Earl grey not needed if you don't have it! - 27 Mar 2011

    Really delicious! I made it this morning, used spelt flour and a mixture of sultanas and dried cranberries. Also substituted the almonds for ground walnuts. The result was lovely - so moist! - 07 Feb 2012
