Fresh tomato, chilli and basil pasta sauce

    A lovely mild tomato and chilli pasta sauce with a hint of basil. Goes with any pasta and takes minutes to make!!

    Serves: 2 

    • glug of olive oil
    • 1 small onion, minced
    • 2 cloves garlic, finely chopped
    • 4 fresh vine-ripened tomatoes - skinned, de-seeded and diced
    • 1 tablespoon tomato puree
    • 2 or 3 green or red chillies, deseeded and diced
    • small handfull fresh basil leaves

    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Heat olive oil in a saucepan and add onions. Cook until soft. Add garlic, cook for about 1 more minute until garlic is just done. Add diced tomatoes, tomato puree and chilli. Mix well and once hot, add your cooked pasta and toss. Serve with a basil leaf to garnish.
