Sweet autumn pie

- 3 apples
- 70g butter
- 3 tablespoons honey
- 100g demerara sugar
- 70g roasted almonds, ground
- spices (mixed spices, red pepper, black pepper, ginger, cinnamon)
- 1 packet filo pastry

- Preheat the oven to 180 C / Gas 4.
- Cut the apples into 1cm cubes without peeling them (too time consuming).
- Cook them in a pan in a spoonful of butter and add the honey, sugar, almonds and the spices to your liking.
- Melt the remaining butter.
- Line a dish with six layers of filo pastry, covering them with butter each time with a brush.
- Put the apple mixture in the dish. Cover it up with another six layers in the same way.
- Cut the extra filo pastry and make up the sides, then brush the top with butter to make it nice and smooth. Sprinkle a little sugar on the top.
- Bake until golden, 30 to 40 minutes. It's best served warmish with thick cream or vanilla ice cream.
