Break the noodle packet into quarters and microwave or boil according to packet instructions.
Meanwhile, heat a wok and add the oil. Add the vegetables and stir fry for about 5 minutes. Add splashes of water as you go to help prevent sticking and also to add a little steam. Add the pork and continue to stir fry until pork is cooked.
Drain the noodles. Add the satay sauce to the stir fry and fry for a couple of minutes until combined and heated through. Add the noodles and mix well for another couple of minutes.
Serve with a good splash of soy sauce on top and garnish with basil leaves.
I use the Yeo® brand satay sauce as I find this to be the best if not making your own. This is available from Asian supermarkets and I have recently seen it in Asda.
This can be adapted with any type of meat or seafood or even as a vegetarian dish. I have also made this with baby corn and mange tout added.
Very easy and quick to make. Looks great. Tastes amazing. A bit of a cheat using a ready made satay sauce - you could just use some peanut butter and spices. But actually I bought a satay sauce from Tesco for 50p and it was delicious so I recommend the hassle free option. - 16 Jul 2016
