Mini gammon and egg filo basket

    Sophisticated yet simple mini gammon and egg filo baskets make a lovely Christmas canape, quickly prepared.

    Serves: 12 

    • 6 free range eggs, soft boiled
    • 5 teaspoons spring onions, finely chopped
    • 4 tablespoons mayonnaise
    • 1 pinch salt and pepper
    • 6 filo pastry sheets, cut into 12 squares
    • 30g butter, melted
    • 1 handful chopped spinach
    • 1 pack Tesco Make a Meal With® mustard gammon, sliced

    1. Preheat the oven to 180 C / Gas 4.
    2. Peel and chop the eggs. Mix with the spring onions, mayonnaise and season with salt and pepper.
    3. Coat each filo square on both sides with melted butter and, using a mini muffin tray, layer 6 squares, making sure the corners don’t overlap so that it creates a round shape.
    4. Bake the pastry for 8 to 10 minutes until golden brown.
    5. Remove from oven and layer each pastry case with spinach leaves and egg mixture and top with mustard gammon slices.
