    About this recipe: A delicious and healthy recipe, with wholegrain pasta, sun dried tomatoes and cucumber, that can be used as a starter and even as a main dish!

    Ingredients
    Serves: 4 

    • For the dressing
    • 1 tablespoon olive oil
    • 2 tablespoons balsamic vinegar
    • salt and pepper
    • For the pasta salad
    • 200g whole grain penne
    • 1 cucumber, julienned
    • 1 jar sundried cherry tomatoes
    • 2 tablespoons tomato pesto
    • 1 teaspoon finely chopped parsley
    • basil leaves

    Method

    1. Start by preparing the dressing: mix 1 spoonful of oil, 2 of balsamic vinegar, some salt and some pepper.
    2. Boil the penne, and make sure you follow the boiling time exactly as it is written on the pack (about 11 minutes) so that it stays a little bit hard (al dente) just like Italian people like it ;)
    3. Julienne the cucumber and strain the sundried cherry tomatoes.
    4. When the pasta is done, drain it, wash it with cold water, strain it again, then add it in a bowl.
    5. Mix the pasta with the vegetables, the tomato pesto sauce, and the dressing. Decorate with parsley and basilic leaves.
    6. Last but not least, enjoy!

    Substitution

    You can replace the sundried cherry tomatoes with fresh tomatoes.

    Tip

    The tomato-pesto sauce can be made by a mixture of regular pesto and ketchup.
