McCambridge bread pudding

    We love recipes for two and bread pudding. I am recovering from heart surgery and took a basic recipe for bread pudding and happened to have two Gala apples that needed to be used. I always have light cream cheese and golden raisins. In this case I had saved the crusts from two loaves of McCambridge bread. To say the least, I made this this evening and it is two thirds gone. No exact measurements required.

    Serves: 2 

    • 4 slices McCambridgereg; bread
    • 4 tablespoons light cream cheese
    • 2 large eggs
    • 2 small cans Carnation® evaporated milk
    • 6 tablespoons water
    • 4 tablespoons sugar
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 2 Gala apples, peeled and thinly sliced
    • 4 tablespoons golden raisins

    1. Preheat the oven to 180 C / Gas 4. Grease a deep oblong ovenproof dish with butter.
    2. Butter bread with cream cheese and place in dish.
    3. Break eggs into a measuring jug and whisk. Add evaporated milk and water and whisk.
    4. Mix sugar, cinnamon and nutmeg together and set aside.
    5. Thin slice peeled apples onto bread then add raisins. Pour egg mixture over all, then sprinkle sugar mixture on top.
    6. Bake in oven for about 30 minutes.

    Serving suggestion

    Can serve warm with ice cream.
