    About this recipe: This filling is super-fruity and simple to make. Dates, raisins, orange, sugar and orange juice are simmered together until thick. Use in pies or to fill cakes.

    Makes: 600 g approximately

    • 145g dates, pitted and chopped
    • 165g chopped raisins
    • 1 large orange
    • 65g caster sugar
    • 4 tablespoons orange juice

    1. Cut orange into sections and remove the seeds. Grind the sections, peels and all.
    2. Combine dates, raisins and ground orange in a medium saucepan; stir well. Stir in sugar and orange juice. Cook over medium heat, stirring constantly, until mixture is thickened.
    3. Spread hot filling between layers or on top of cake.
