    About this recipe: This leek and potato soup is extremly popular, and a lot of people have their own way of making it. Well, here's mine.

    • 400g leeks, chopped
    • 200g celery, chopped
    • 100g onion, chopped
    • 1 clove of garlic, chopped
    • a few sprays of oil
    • 500g potatoes, chopped
    • 600ml hot vegetable stock

    1. Sweat off onions, garlic, celery and leeks in a few sprays of oil, until transparent and soft.
    2. Add the potatoes and stock. Bring to the boil, and then simmer for 30 minutes, or until potatoes are tender.
    3. Once potatoes are cooked, you can either keep it as a chunky soup, or add a little water and blend it into a smooth soup.
