About this recipe:It's well worth making your own pizza base, sauce and topping. My version here tastes authentic - thin base with homemade pizza sauce, topped with mozzarella, pepperoni, salami and chorizo with a sprinkle of oregano. I also vary it by adding jalapenos, mushroom and onion. Add your own favourite toppings but be careful not to overload it. Fresh yeast for the base is available from most supermarkets that have an in-store bakery.

Sift the flour onto a work surface. Make a well in the centre and add the yeast, followed by the salt. You need to work quickly here as the watery mixture from the yeast will start to seep out. Mix well and slowly add the water, a bit at a time. Knead well until you have a dough that is elastic and feels rather light.
Half the dough and shape into two balls. Put onto a floured plate, cover loosely with a clean tea towel and place in a warm place until dough rises to 1 1/4 to 1 1/2 times its volume, about 1 hour. An airing cupboard is a good place.
Preheat the oven to its highest setting. On a floured surface roll out each ball as thin as you can. Don't worry if it is not perfectly round. Place the base onto a floured pizza tray.
Spread approx 1 1/2 tablespoons of the tomato sauce onto the base. Add 1 mozzarella ball, drained and sliced into about 6 slices, the meat slices and a sprinkle of oregano.
I have made my own pizza dough in the bread maker but cheated this time, and bought ready made. But made my own tomato sauce, and followed the rest of the recipe to the letter. Very tasty, moist topping. Have already made it twice, and will do it again. - 27 Sep 2015
