About this recipe: Vegetables roasted in honey and sprinkled with thyme. Serve as a side dish or on top of lettuce with leftover roast beef for a warm salad.

Serves: 4 

  • 8 florets broccoli
  • 4 carrots, thickly sliced in chunks
  • 2 large leeks, chopped
  • 1 large red pepper, chopped
  • 1 large green pepper, chopped
  • 5 tablespoons clear honey
  • 1 sprig thyme, or dried thyme

Prep:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Preheat the oven to 200 C / Gas 6. Bring water to the boil and add vegetables. Cook for 5 minutes.
  2. Bring a small pot of water to the boil and place honey in a bowl over pot and allow honey to melt slightly.
  3. Remove vegetables from water, place into honey bowl and mix thoroughly. Place vegetables into greased roasting dish and sprinkle with thyme.
  4. Roast for 30 minutes.
