    We made these ginger biscuits to give to the children who attended our Crib Service on Christmas Eve. The recipe is Swedish and another name for them is Swedish ginger biscuits.

    Makes: 60 biscuits

    • 100g butter
    • 100g demerara sugar
    • 200g golden syrup
    • 1 teaspoon ground ginger
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 2 teaspoons bicarbonate of soda
    • 1 egg
    • 500g plain flour
    • icing to decorate

    1. Preheat the oven to 170 C / Gas 3.
    2. Roughly cut up the butter and place in a large bowl.
    3. In a saucepan, bring the sugar, syrup and the spices to boiling point.
    4. Add the bicarbonate of soda and pour over the butter. Stir until the butter has melted. Note - the mixture will bubble up in the saucepan so use care when transferring it to the bowl containing the butter.
    5. Beat in the egg and slowly blend in the sifted flour.
    6. Knead in the basin to a smooth manageable dough. Note - I use the dough hook on my Kenwood Chef.
    7. Roll out about a quarter of the dough at a time about 3mm thick. Use cutters to make various shapes and place on baking sheets.
    8. Bake in the preheated oven for 10 to 15 minutes. Cool on a wire rack and decorate.


    I chill the dough for about 20 minutes and roll it out between baking paper to stop it sticking.
