Rice pudding with raisins

    Homely pudding which I have modified from a pudding which I grew up on. Not a fancy gateau or anything like that, just simple and wholesome to warm you up on a cold day.

    Serves: 6 

    • 170g (6oz) pudding rice
    • butter for greasing dish
    • 85g (3oz) caster sugar
    • 2.1L (3 1/2pt) full fat milk
    • 85g (3oz) raisins
    • 1/2 teaspoon ground cinnamon (optional)

    1. Preheat oven to 160 C / Gas 2 1/2.
    2. Rinse rice in cold water and place in a greased ovenproof dish big enough to hold 4 pints.
    3. Whisk together the sugar, milk, raisins and cinnamon and pour over the rice.
    4. Bake until the rice is soft, about 2 hrs 30 minutes.
