Pasta sauce Ronnie style

    A simple tomato based pasta sauce can be used on its own as a snack, or with meat and veg for a simple meal. It also can taste good with certain fish, like sea bass.

    Serves: 2 

    • a dash olive oil
    • 1/2 onion, diced
    • basil and oregano
    • 225g minced beef or lamb
    • 1 splash balsamic vinegar
    • 1 tin tomatoes
    • salt and pepper
    • 110g pasta
    • Parmesan or Cheddar cheese

    1. Heat olive oil in pan. Fry off onions until translucent with half of the herbs.
    2. Brown meat off in the same pan. Add a splash of balsamic vinegar.
    3. Add tomatoes and rest of herbs; season with salt and pepper. Bring to the boil, then simmer for 45 minutes to 1 hour.
    4. Cook pasta and drain. Add sauce and meat to pasta, sprinkle on cheese and mix together well. Serve.

    Use for leftovers

    This freezes well, so (If you live on your own) make a big batch of the meat and sauce, and freeze into portions, defrost and reheat, and just need to cook pasta fresh.
