Flat mushrooms stuffed with pancetta and mozzarella

    Easy, quick and simple, although a little fiddly, but delicious! Flat mushrooms are stuffed with pancetta and mozzarella cheese.

    Makes: 2 

    • 2 flat mushrooms
    • 1 garlic clove, crushed
    • 1 ball mozzarella cheese
    • 1 packet pancetta
    • 1 pinch salt
    • 1 pinch black pepper
    • 1 drizzle extra virgin olive oil

    1. Preheat the oven to 180 C / Gas 4.
    2. Remove the stem from the mushrooms and using a spoon, remove all of the inside of the mushroom leaving a large bowl-like shape.
    3. Add the crushed garlic into the bottom of the mushrooms then layer with pancetta and mozarella (as much as you like!). Season with salt, black pepper and a drizzle of oil.
    4. Pop in the oven for around 20 minutes.

    Used different ingredients. I used smoky bacon as the shop didn't have pancetta - just as nice.  -  23 Feb 2011


    I used 4 large flat mushrooms and used the same ingredients stated but shared equally in them all. They turned out lovely and very tasty. I served them with a small, buttered crusty roll to mop up the delicious juices they produced once cooked.  -  28 Dec 2014
