Chocolate and Irish cream cheesecake

    This is a recipe I use a lot, I make it for my local pub. It's had lots of great feedback from the customers, and it's a hit with a few of the staff too! It's easy to make and doesn't need baking.

    Serves: 12 

    • 400g chocolate chip cookies
    • 100g butter
    • 675g good quality chocolate
    • 80g caster sugar
    • 525g cream cheese
    • 635ml double cream
    • 8 - 10tbsp Irish cream liqueur
    • fresh raspberries (optional)

    1. Crush the cookies into fine crumbs in a mixing bowl, melt the butter and stir into the cookie crumbs. Press firmly into the base of a deep 23cm springform tin. Chill in the fridge for an hour.
    2. Melt the chocolate in a bowl over a pan of simmering water. Once the chocolate is completely smooth, remove from the heat and allow to cool slightly.
    3. While the chocolate is cooling, beat the sugar and cream cheese together in a large bowl. In a separate bowl, whip the cream.
    4. Stir the cream into the cream cheese and sugar mixture until thoroughly combined, then add the chocolate and Irish cream.
    5. Pour the mixture into the tin, smooth the top with the back of a spoon and chill for 6 hours. Serve with creme fraiche or cream, and garnish with fresh raspberries.

    I halved the ingredients which still makes a big cheesecake, to make it look extra special I melt a couple of chunks of white and dark chocolate chunks separately, blob these on the top and swirl it round with a skewer, it looks and tastes gorgeous!!! very easy to make and never lasts long  -  17 Oct 2013
