Smoked haddock and cheese sauce

    Easy fish meal. Serve with mashed or boiled potatoes, peas and broccoli with a large slab of buttered crusty bread.

    Serves: 4 

    • 4 pieces smoked haddock
    • fresh milk
    • salt and pepper
    • grated strong Cheddar cheese

    1. Add fish to large frying pan and cover with fresh milk. Add salt and pepper to taste.
    2. Bring to boil, reduce heat and gently poach for 7 to 10 minutes, depending on size of fish.
    3. Remove fish from pan and put somewhere to keep warm.
    4. On a low heat, stirring continuously with a whisk, gently add cheese to milk until the consistency changes to a sauce.
