    About this recipe: Cheap and filling. This hearty vegetable soup with bacon cooks in the slow cooker. You may need to add more water depending on how thick you like it.

    Serves: 6 

    • 300g broth mix
    • 180g bacon lardons
    • 1 packet shop bought prepared soup veg or 1 large onion, 2 carrots, leek, turnip
    • 2 potatoes, quartered
    • 2 Knorr® ham stock cubes
    • salt and pepper

    Prep:10min  ›  Cook:7hr  ›  Extra time:8hr soaking  ›  Ready in:15hr10min 

    1. Soak broth mix for 8 hours.
    2. Flash fry bacon lardons and drain. Add to slow cooker with vegetables.
    3. Dissolve stock cubes in enough water to almost fill slow cooker and add. Season with salt and pepper.

    This has become a regular in my house :-) I use one packet of bacon instead of lardons and I chuck in anything else that needs used like chicken.  -  04 Jan 2016


    One the family's favored winter meals now have it at least once every 2 weeks. we tweak the recipe slightly throwing veg that needs using up as well as what it says in the recipe. It also freezes well.  -  18 Jan 2015
