Stuffed chicken breasts wrapped in bacon

    Renovate your chicken breast with this simple recipe. By stuffing it with cheese and garlic, then wrapping it in bacon, you get a lovely moist piece of chicken. You can easily double the ingredients if cooking for more people.

    Serves: 2 

    • 2 chicken breast fillets
    • 1 mozzarella cheese ball, drained and sliced
    • 2 garlic cloves, minced
    • 4 slices bacon
    • 1 red onion, cut into wedges
    • olive oil to drizzle
    • 1 teaspoon chopped rosemary

    1. Preheat the oven to 200 C / Gas 6. Make a pocket in each of the chicken breasts by slicing down one side of them but make sure you do not slice all the way through.
    2. Stuff each pocket with mozzarella and a quarter of the minced garlic.
    3. Wrap each stuffed breast with two slices of bacon and secure in place with a cocktail stick. The pocket opening should be completely covered.
    4. Put the chopped onion and garlic into a shallow overproof dish and drizzle over a little olive oil.
    5. Sit the chicken breasts in the dish and sprinkle with rosemary.
    6. Pop in the oven and cook for 30 minutes or until the juices run clear when pierced with a thin skewer.

    Serving suggestion

    Serve with fresh vegetables and new potatoes.

    I came across this recipe yesterday morning, when I was looking for new idea's for tea time for me, my husband and our son. We all very much enjoyed it, and I served it with cous cous and salad with a salad dressing. Was lovely!  -  01 Oct 2013


    We had friends coming for a meal, thought I,d try this, it was delicious. Put it in the oven when they arrived, it took 45 mins to cook, maybe they were big chicken breasts. Lovely and moist, served with new potatoes and green beans. Next time might stuff with Stilton. It looked impressive and tasted great.  -  29 Jun 2014
