Potato, onion and chicken soup bake

    A really scrummy dish made with layered thin potatoes, onion and bacon all cooked in a cream of chicken soup and topped with breadcrumbs and grated cheese.

    Makes: 4 servings, depending on how hungry people are or if it's the main dish!!

    • 2 onions, chopped
    • 1 (200g) packet bacon, chopped
    • 5 potatoes, very thinly sliced
    • 1 tin cream of chicken soup
    • 2 slices bread
    • 1 handful grated cheese

    1. Preheat the oven to 180 C / Gas 4.
    2. Cook onion in a frying pan and then add chopped bacon.
    3. Layer potatoes first, then onion and bacon, then some cream of chicken soup into an ovenproof dish. Continue layering until everything is used up.
    4. Finishing with a layer of potatoes then break bread into rough chunks and scatter on top with grated cheese being last.
    5. Bake in the preheated oven for about 1 hour.


    I bake this casserole in my Rayburn for a couple hours on Medium setting. I cook by eye, really, so these ingredients are a rough guideline but this is the general idea of the dish. Hope you enjoy. Today I am trying a variation of leeks and bacon instead of onion. Teamed with sausages would make a homely meal.
