Delicious cold rice salad with chicken, sweetcorn, chorizo and tomato. Ideal for the lunch box for work or serve at a BBQ. This recipe came about after having some leftover chicken mixture from my chicken enchilada recipe and has been slightly adapted now as a recipe in its own right.
Serve with a crusty bread roll for a substantial lunch.
