Thai inspired king prawn hot and sour broth

    A healthy, tongue tantalising, Oriental soup-like dish inspired by the Thai favourite Tom Yum Soup. Low in fat, low in salt but high in flavour. For those who want to lose weight but don't want the boring salad, this dish is for you. So easy to prepare literally takes 15 minutes to prepare and cook. Faster than most microwave meals!

    Makes: 1 Bowl

    • 2 sprays Spray light oil (olive oil)
    • 1 clove garlic, crushed or finely chopped
    • 2 spring onions, sliced
    • 1/2 chilli, or to taste
    • 1 teaspoon grated root ginger
    • 2 tomatoes, seeded and chopped
    • 1 handful chopped fresh coriander
    • 1 small handful fresh Thai basil (optional)
    • 250ml chicken stock
    • 1 teaspoon soy sauce
    • 100g king prawns, thawed if frozen
    • 150g fresh rice noodles

    1. Spray a wok with spray oil and lightly stir fry garlic, spring onions, chilli, ginger and tomatoes.
    2. After a minute or so, add the chopped coriander and Thai basil, stir fry for a minute.
    3. Add stock and soy sauce and bring to the boil.
    4. Add the king prawns and stir well, making sure broth covers the prawns. Place a lid on top of the pan and simmer for a few minutes.
    5. Add the rice noodles and cook for a further couple of minutes. Serve immediately in a bowl with Thai basil, if using.


    Do not overcook this broth. It literally takes less than 10 minutes to cook.
