    About this recipe: A simple and delicious coq au vin, one of the finest French dishes. Serve with fluffy mash for a delicious evening meal.

    Serves: 2 

    • 50g butter
    • 4 chicken breast fillets
    • 2 tablespoons flour
    • 1 onion, diced
    • 2 cloves garlic, minced
    • 500ml water
    • 250ml red wine
    • 3 carrots, diced
    • 1 tablespoon tomato puree
    • 1 teaspoon thyme
    • 1 teaspoon parsley
    • salt and pepper to taste

    1. Melt butter in deep pan and add chicken, cook for a few minutes. Add flour, onion and garlic.
    2. Add water and wine to the pan with chicken and stir. Add carrots along with tomato puree to the pan. Add thyme and parsley and bring to the boil.
    3. Reduce heat and allow to simmer for 1 hour. Add salt and pepper to taste.
