Homemade salami smoked

    Homemade salami made with minced meat, such as pork. Smoked using black walnut woodchips. To add a little heat, use red pepper flakes, about 2 tablespoons or to taste.

    Makes: 6 1lb rolls

    • 2.7kg lean beef or pork mince
    • 4 1/2 tablespoons mustard seed
    • 3 tablespoons garlic salt
    • 4 tablespoons salt
    • 2 tablespoons kosher salt
    • 4 tablespoons coarse ground pepper

    Prep:3days  ›  Cook:3hr  ›  Ready in:3days3hr 

    1. Mix by hand all ingredients together. Put in bowl and keep in refrigerator. Knead the mixture every day for 3 days.
    2. Then roll into 450g loaves.
    3. Place in smoker using hot water to keep it moist, and smoke for 3 hours.

    Freezing tip

    Stored in vacuum seal bags, salami will keep for a year in freezer.
