About this recipe: A filling meal of juicy chicken breast fillets, stuffed with herbs and garlic, wrapped in bacon and baked, good for any occasion. Serve with mashed potatoes.

Serves: 2 

  • 4 garlic cloves, crushed
  • 4 chicken breast fillets
  • chopped fresh herbs (optional)
  • 8 rashers bacon

Prep:30min  ›  Cook:45min  ›  Ready in:1hr15min 

  1. Preheat the oven to 170 C / Gas 3.
  2. Spread 1 clove crushed garlic over each chicken breast. Do the same with the herbs, if using.
  3. Wrap each chicken breast in 2 rashers of bacon. Place on baking tray and do not cover.
  4. Bake until the chicken is no longer pink at the centre, about 45 minutes. If the bacon begins to burn, cover the dish lightly with aluminium foil.

Make it healthier

Remove fat from bacon before wrapping it around the chicken breast.

Simple and it works. Couple of tweaks - I split open the Chicken breasts and added some tasty cheese as a filling, other fillings are available, and I brushed the bacon with olive oil towards the end to keep it from drying out too much. Served it with a cheese and leek sauce and a baked potato. - 17 Feb 2015
