Som tam (Thai green papaya salad)

    Fresh and authentic Thai salad, with traditional grated green papaya, long green beans and a bit of hot chilli.

    Serves: 4 

    • 250g green papaya
    • 1 tomato
    • 50g long green beans
    • 1 garlic clove, chopped
    • 2 tablespoons lime juice
    • 2 Scotch bonnet or birds eye chillies
    • 2 tablespoons palm sugar
    • 2 tablespoons fish sauce
    • 1 tablespoon shrimp paste or fish sauce
    • 1 tablespoon unsalted peanuts, chopped

    1. Grate papaya, deseed tomato and slice into 1cm pieces; quarter the beans.
    2. Roughly chop the garlic then add all the other ingredients into a mortar and pestle. Pound the ingredients until the papaya becomes soft.
    3. Serve immediately to avoid becoming soft.


    Play about with the chilli in future depending on taste.
