Spiced Date and Nut Cake

    A nice cake to eat at any time and it is very easy to make and bake. It is low in calories and you can change the fruit and nuts to suit. If you use a silicone cake mould, you don't have to grease or line the tin.

    Serves: 6 

    • 150g wholemeal flour
    • 150g self-raising flour
    • 1 teaspoon baking powder
    • 2 teaspoons mixed spice
    • 120g chopped dates
    • 30g raisins or currants
    • 30g chopped walnuts or pecans
    • 20g flaked almonds
    • 60ml sunflower oil
    • 115g dark or light brown soft sugar
    • 300ml skimmed milk
    • walnut halves to decorate the top

    1. Preheat the oven to 180 C /Gas 4. Grease and then line a 900g/2lb loaf tin with greaseproof paper.
    2. Sift the flour and spice into a bowl adding back any bran from the sieve. Stir in the dates, walnuts, raisins and flaked almonds.
    3. In another bowl mix the oil, sugar and milk, then stir into the dry mixture until mixed.
    4. Spoon into the prepared tin and then arrange the walnut halves on top. Bake for 45-50 minutes or until golden brown and firm to the touch. Let it cool for 5-10 minutes and then take it out of the tin. Remove the lining and leave to cool on a wire rack.


    I have made this using my microwave, the Sharp R-959M-A Combination Convection, and the Auto Cook feature.


    I have used a 2lb silicone mould (from TKmaxx) as you don't need to use any lining.

    Something else. I used Flake Almond to top this cake instead of Walnut Halves.  -  29 Jan 2011
