Turn the slow cooker onto low. In a frying pan heat heat a little oil over low to medium heat. Sear the pork for a few minutes and add to the slow cooker and add the potatoes.
In the same fry pan fry the onion and garlic for a few minutes. Remove with a slotted spoon and place in the slow cooker. In the fry pan add the white wine and undiluted chicken stock pot. Stir with a wooden spoon until the stock melts into the wine. Stir in the tomato puree and bring the mixture to the boil. Pour into the slow cooker.
Add oregano; season with salt and pepper. Cover and cook on low for about 6 hours then add the mushrooms, beans and cauliflower. Cook for another 2 hours and serve.
The veg does go quite soft but still works well and has a really nice flavour.
