Slow cooker pucker up pork

    Deliciously tender pork with mushrooms, cauliflower, potato and green beans in a delicate white wine and stock sauce. Serve with pasta, rice or creamy mash.

    Serves: 4 

    • oil as needed
    • 500g diced pork
    • 2 medium potatoes, peeled and diced
    • 2 medium onions, peeled and sliced
    • 1 clove garlic, crushed
    • 1/2 glass white wine
    • 1 Knorr® chicken stockpot
    • 1 1/2 tablespoons tomato puree
    • 1 good pinch dried oregano
    • salt and pepper
    • 1 large handful mushrooms, quartered
    • 1 handful greens beans, halved
    • 1/4 head cauliflower, broken into florets

    1. Turn the slow cooker onto low. In a frying pan heat heat a little oil over low to medium heat. Sear the pork for a few minutes and add to the slow cooker and add the potatoes.
    2. In the same fry pan fry the onion and garlic for a few minutes. Remove with a slotted spoon and place in the slow cooker. In the fry pan add the white wine and undiluted chicken stock pot. Stir with a wooden spoon until the stock melts into the wine. Stir in the tomato puree and bring the mixture to the boil. Pour into the slow cooker.
    3. Add oregano; season with salt and pepper. Cover and cook on low for about 6 hours then add the mushrooms, beans and cauliflower. Cook for another 2 hours and serve.


    The veg does go quite soft but still works well and has a really nice flavour.
