Leftovers pasta bake

    Easy pasta bake which you could adapt from most leftovers. Here I have used leftovers from my 'Slow cooker pucker up pork' but even a Sunday roast could be incorporated. Pasta, leftovers, cheese sauce and topped off with breadcrumbs and baked. Serve with a crusty bread roll or garlic bread.

    Serves: 2 

    • 300g spiral or macaroni pasta
    • 1 1/2 tablespoons butter at room temperature
    • 2 tablespoons plain flour
    • 120ml milk, or as needed
    • salt and pepper
    • 1 large handful grated cheese
    • leftovers of your choice (see note below)
    • 3 tablespoons breadcrumbs
    • 1 good pinch dried mixed herbs

    1. Preheat the oven to 190 C / Gas 5. Bring a large pan of salted water to the boil and cook the pasta until tender with a bite at the centre. Drain and pour into a large bowl.
    2. Meanwhile make the cheese sauce. Melt the butter over low heat in a saucepan. Add the flour and mix well. stirring constantly with a wooden spoon. A little at a time add the milk until you have a smooth sauce.
    3. Add the salt and pepper and the cheese. Stir well until cheese has melted. Add 'leftovers' to pasta bowl and pour over cheese sauce. Mix well.
    4. Spoon into an ovenproof dish. Sprinkle with the breadcrumbs and herbs. Cover with foil.
    5. Bake in the oven for 25 minutes. Remove the foil and bake for until piping hot all the way through about 15 more minutes. Serve.

    Serving suggestion

    The Slow cooker pucker up pork recipe serves 4 so we ate a portion for 2 and saved the remaining half for this recipe.

    Serving suggestion

    Sunday roast leftovers such as the meat of your choice chopped into small chunks with the veg chopped and mixed together would be nice also.
