I buy lamb kidneys quite often from my local butcher and I decided to add them to my hot pot. I also add a pinch of curry powder but you don't have to. This is perfect comfort food for a cold winter day.
Arrange the chops, kidneys and onions in layers in a large casserole. Season with salt and pepper, sprinkle with curry powder and then cover with stock. Arrange the potato slices slightly overlapping on top. Cover and bake for 1 ½ hours, then remove the lid and continue to bake for an additional 30 minutes or until the potatoes are golden brown on top.
