Mashed Potato, Ham and Chive Omelette

    This came together by accident but really makes a delicious light lunch or supper. It's also the perfect omelette to make when you have left over roast ham and mashed potatoes!

    Serves: 2 

    • 4 eggs
    • 225g leftover mashed potato
    • 2 tablespoons fresh chives, finely chopped
    • 1 tablespoon butter
    • 200g leftover roast ham or gammon, diced
    • Extra butter

    1. Beat the eggs and mix in the mashed potato. Add butter, chives and diced ham. The omelette mix will have a slightly thicker consistency than regular omelette due to the mashed potato. Season with salt and pepper.
    2. Melt a little butter in a frying pan and pour in egg mixture. Allow 3-4 minutes on high heat before turning or finishing under the grill. Serve immediately.
