Preheat the oven to 190 C / Gas 5. Grease a nonstick mini muffin tray.
Add the salt, pepper and all other ingredients to the bowl of beaten eggs. Mix well and divide the mixture evenly between the 12 tray portions. Fill to the brim.
Bake in the preheated oven until a skewer inserted near the centre comes out clean, 12 to 15 minutes. Remove from the oven and allow to cool a little in the tray before lifting out onto a plate. Serve.
I had all the ingredients so decided to try these out. Glad i did, theywere so easy to make and delicious. I added more ham and instead of the sweetcorn i added chopped tomatoes.
