    About this recipe: These little morsels are so easy to make - serve warm or at room temperature for nibbles at a drinks party or eat with salad and some warm bread for quick lunch. Here I have used ham, cheese, sweetcorn and spring onion but there are endless possibilities with different fillings. You will need a non-stick mini muffin tray.

    Ingredients
    Makes: 12 

    • 3 eggs, beaten
    • salt and pepper
    • 1 splash milk
    • 1 handful grated cheese
    • 2 tablespoons sweetcorn
    • 1 slice ham, finely chopped
    • 2 spring onions, finely chopped

    Method
    Prep:5min  ›  Cook:12min  ›  Ready in:17min 

    1. Preheat the oven to 190 C / Gas 5. Grease a nonstick mini muffin tray.
    2. Add the salt, pepper and all other ingredients to the bowl of beaten eggs. Mix well and divide the mixture evenly between the 12 tray portions. Fill to the brim.
    3. Bake in the preheated oven until a skewer inserted near the centre comes out clean, 12 to 15 minutes. Remove from the oven and allow to cool a little in the tray before lifting out onto a plate. Serve.

    I had all the ingredients so decided to try these out. Glad i did, theywere so easy to make and delicious. I added more ham and instead of the sweetcorn i added chopped tomatoes. Thanks for sharing this! x  -  09 Jun 2013

    Quick and easy to make. I put the mixture into a Yorkshire pudding tin they are a bit bigger than a muffin tin. They came out very nicely, light and tasty. These will become a regular dish in my household. Thank you.  -  12 Jan 2017
