Here I have used ham, cheese, sweetcorn and spring onion but there are endless possibilities with different fillings. You will need a non-stick mini muffin tray.

Quick and easy to make. I put the mixture into a Yorkshire pudding tin they are a bit bigger than a muffin tin. They came out very nicely, light and tasty. These will become a regular dish in my household. Thank you. - 12 Jan 2017
