Bruschetta topping

    This is a delicious topping for lightly toasted slices of french baguette. Use good extra virgin olive oil - it makes all the difference. Ideal for summer barbecue parties or as a starter.

    Serves: 6 

    • 1 tomato, seeded and diced
    • fresh basil, chopped
    • 1 small shallot, diced
    • 1 tablespoon olive oil
    • salt to taste
    • baguette slices

    1. Season the tomato with salt and mix in chopped basil, minced shallot and olive oil.
    2. Lightly toast the bread in a toaster or under the grill.
    3. Add a few drops of olive oil on each slice of bread.
    4. Spoon over the tomato and basil mixture. Serve!
