About this recipe: I made this for my son's birthday party. He loves trains and his birthday is in December so I covered the tracks with icing sugar to look like snow! It's also great to make instead of a Christmas cake which most children don't like.


Serves: 8 

  • 125g dark chocolate chips
  • 100g butter, melted
  • 100g caster sugar
  • 3 eggs, separated into yolks and whites
  • 60g plain flour
  • Sweets to decorate the cake (liquorice, jelly beans, smarties)
  • Various fruit to decorate the cake (raspberries, blueberries)
  • Icing sugar

  1. Preheat the oven to 165 C / Gas 3.
  2. Microwave the chocolate pieces in a glass bowl on maximum power for 1 minute. Add the butter and microwave again for 30 seconds; stir. Add the sugar and mix again. Mix in the egg yolks, one at a time and fold in the flour.
  3. In a deep, clean bowl, whisk the egg whites until stiff. Stir into the cake batter. Pour the batter into in a rectangular mould or greased loaf tin.
  4. Bake in the oven for 35 minutes, then remove from the tin and cool on a wire rack.
  5. Slice into rectangles for the engine and the carriages. Cut up liquorice sticks to make the tracks. Decorate the carriages with fruit or sweets. Sprinkle with icing sugar to make everything look covered in snow.
