Almond Orange Madeleines

    A delicious treat or great for a bake sale. Be warned, these go quickly! You can find madeleine moulds in any specialty cookware shop.

    Serves: 12 

    • 100g butter
    • 3 eggs
    • 125g caster sugar
    • 2 drops of orange extract or a teaspoon of orange flower water
    • 100g ground almonds
    • 125g plain flour
    • 1 teaspoon baking powder

    1. Preheat the oven to 180 C / Gas 4.
    2. Melt the butter in the microwave for 15 seconds.
    3. Beat the sugar with the eggs until light and frothy. Add the melted butter, mix well. Add the ground almonds and orange extract. Mix again. Add the flour and baking powder and mix well.
    4. Place a teaspoonful of the mixture into each madeleine mould. (It should be half full).
    5. Bake for about 10 minutes, or until risen and golden.
