Flambéed Apple Calvados Crepes


    This is a popular French recipe but it's important to use good quality Calvados brandy for best flavour. Be careful when you flambe, always have a lid close by just in case!

    Serves: 1 

    • 1 apple
    • a knob of salted butter
    • a teaspoon of sugar
    • 50ml Calvados
    • 1 ladle of crepe batter

    1. Peel and core the apple, cut into slices. Add a knob of butter and apple to a frying pan and cook on medium to high heat for 3 minutes or until brown, sprinkle with sugar.
    2. Place a ladle of batter in another frying pan over medium heat and cook for a few minutes or until golden brown. Turn the crepe over and cook for one more minute. Add the Calvados and flambé until you no longer have any alcohol in the pan. Add the apple mixture. Fold the crepe and serve immediately.
