Authentic Nicoise Salad

    A delicious, filling salad for summer. Use the freshest eggs, tomatoes and olives for best results.

    Serves: 4 

    • 6 eggs
    • 1 cucumber, peeled
    • 8 tomatoes, diced
    • 1 stick celery, diced
    • 1 green pepper, diced
    • 50g fresh parsley, chopped
    • 1 tin of tuna, in oil
    • 10 olives
    • 8 anchovy fillets
    • For the vinaigrette
    • 3 teaspoons extra virgin olive oil
    • 1 teaspoon balsamic vinegar
    • Salt and pepper

    1. Bring water to the boil in a saucepan then add the eggs and cook for 10 minutes. Drain and cool in cold water. Peel and quarter.
    2. Add the diced cucumber, tomatoes, celelry, green pepper, boiled egg and parsley to a bowl; mix. Add the tuna, olives and anchovy fillets.
    3. To make the vinaigrette: mix the oil and vinegar with a fork. Season with salt and pepper.

    I made this for my husband, he loved it - we did not have any anchovy but it was still really yummy and surprisingly filling.  -  28 Jan 2014
