About this recipe: No need to add much to delicious local lamb! Instead of buying individual chops and pan frying them, buy a rack of lamb, bake for 30 minutes, then slice and serve. It will be cooked medium rare - perfect!


Serves: 4 

  • Rack of lamb with 8 chops
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Prep:5min  ›  Cook:30min  ›  Ready in:35min 

  1. Preheat the oven to 180 C / Gas 4.
  2. Brush the rack of lamb with olive oil. Season with salt and pepper and roast for 30 minutes.
  3. Remove from the oven and set aside for a few minutes then slice and serve. The meat will be medium-rare.
