Rack of lamb with 8 chops
1 tablespoon olive oil
Salt and pepper to taste

Preheat the oven to 180 C / Gas 4.
Brush the rack of lamb with olive oil. Season with salt and pepper and roast for 30 minutes.
Remove from the oven and set aside for a few minutes then slice and serve. The meat will be medium-rare.
