Beef with Tomato and Mushrooms

    There's nothing quite like a pure and simple beef stew. It tastes even better reheated the next day.

    Serves: 8 

    • 1 tablespoon olive oil
    • 2 large onions, finely chopped
    • 3 garlic cloves, finely chopped
    • 1kg beef steak, cubed
    • 1.5 kg fresh tomatoes, quartered
    • 100ml tomato puree
    • 500g white mushrooms, washed and sliced
    • 300ml vegetable stock

    1. Add the onions, garlic and olive oil to a large cast iron casserole pot.
    2. Add the beef and cook on high heat until brown.
    3. Lower to medium heat, then add the tomatoes and tomato puree and cook for 5 minutes. Add the mushrooms and stock.
    4. Cover and simmer for about 2 hours.

    I didn't make as much as there are only two of us. I used a tin of mushrooms and a tin of chopped tomatoes as I had no fresh ones. I also added a tin of kidney beans as we love them. Everything else was the same. We both absolutely loved the meal, very tasty and with the homemade bread I made that day it went down a treat!  -  20 Nov 2015
