Celeriac and walnut salad

    A nice, light salad that works well as a starter.

    Ingredients
    Serves: 4 

    • 400g grated celeriac
    • 50g walnuts
    • 1/2 teaspoon Dijon mustard
    • 1/2 teaspoon lemon juice (optional)
    • 125g plain yoghurt
    • A pinch Salt and pepper to taste

    Method

    1. In a bowl, combine the yogurt, mustard, lemon, salt and pepper.
    2. Add the celeriac and walnuts then mix well.
    3. Serve at room temperature (not too chilled otherwise, it would change the taste).
