Chicken with Bacon and Tomatoes


    An easy midweek meal that uses up what you have in the fridge! It's good with garlic bread or with pasta.

    Serves: 4 

    • 4 chicken breasts
    • 1 onion, finely chopped
    • 1 tablespoon olive oil
    • 6 fresh tomatoes, cored and chopped
    • 2 slice of bacon, chopped

    1. Heat olive oil over medium heat. Add onion and cook until softened. Add the bacon and cook until slighty crispy.
    2. Add the chicken breasts and cook for 10 minutes, or until browned. Add the chopped tomatoes and cook for 5-10 more minutes, depending how saucy you want it.
