Spicy Bean Soup

    Serves: 10 

    • 1 tablespoon vegetable oil
    • 200g chopped onion
    • 180g sliced carrots
    • 2 cloves garlic, minced
    • 600ml chicken stock
    • 2 teaspoons sugar
    • 450g frozen sweetcorn
    • 400g tin kidney beans, drained and rinsed
    • 400g tin black beans, rinsed and drained
    • 400g tin chopped tomatoes with basil
    • 400g tin chopped tomatoes, drained
    • 110g diced green chillies

    1. Heat the oil in a large casserole dish over medium-high heat until hot. Add onion, carrot and garlic; saute 5 minutes. Stir in stock, sugar, sweetcorn, beans, tomatoes and chillies; bring to the boil. Cover, reduce heat, and simmer 2 hours.
    2. This soup can also be prepared in a slow cooker. Combine everything in the pot, and cook on HIGH for the first hour. Turn the temperature down to LOW, and cook 7 more hours.

    Very nice recipe especially made during the winter months. May be a bit spicy for those who can't take a lot of heat but for those like me it's just right  -  15 Oct 2014


    A VERY spicy soup. I prefer to cut down the amount of green chillies used to my personal taste. A very healthy and tasty soup.  -  22 Mar 2013


    I agree that this is a good, basic soup recipe. I also had to "spice" it up a bit by adding cumin, chili powder, garlic powder, black pepper, cayenne pepper, red wine vinegar, oregano, and basil.
