    About this recipe: Here's how to make the perfect poached egg for this delicious brunch dish. Simplify the rest by using some ready made hollandaise sauce! There are some pretty good fresh options in the supermarket these days.

    Serves: 1 

    • 1 egg
    • 1 tablespoon vinegar
    • 1 muffin, toasted
    • 1 thin slice of bacon, grilled
    • 2 tablespoons hollandaise sauce, warmed

    1. Bring some water to the boil in a saucepan. Add the vinegar, then crack the egg and gently drop in the water. Cook for 2 minutes. Remove from the water with a slotted spoon and delicately transfer it onto kitchen roll (to remove the excess water).
    2. Butter the toasted muffin, top with bacon and poached egg. Spoon over warm hollandaise sauce, season with pepper and serve.
